Hot Fudge Pudding Cake

I got this out of a magazine quite a while ago.

HOT FUDGE PUDDING CAKE

1 c. all purpose flour
2/3 c. granulated sugar
2 tsp. baking powder
1/2 tsp. salt
1 tsp. ground cinnamon
1/2 c. unsweetened cocoa
1/2 c. whole milk
2 tbspn. melted butter
1 tsp. vanilla extract
1 c. packed brown sugar
1 1/2 c. boiling water

Preheat oven to 350. Grease 8x8 baking dish.

In medium bowl, combine flour, sugar, baking powder, salt, cinnamon, and 1/4 c. cocoa. Whisk in milk, butter, and vanilla just until smooth. Spread batter evenly into baking dish.

In small bowl, mix brown sugar and 1/4 c. cocoa; sprinkle evenly over batter. Carefully pour boiling water over mixture in baking dish. DO NOT STIR.

Bake 30 minutes (batter will separate into cake and pudding layers.) Cool in pan on wire rack for 10 minutes. Serve warm in dessert bowls.

This is really good served with vanilla ice cream!

Onion Chicken (Diet-Friendly)

Source: Carol on Barbo's Diet Kitchen (website which I can no longer find!)  :(

- 4 (3 oz.) chicken breasts, skinless/boneless
- 1/4 c. fat free margarine
- 4 T. Worcestershire Sauce
- 1 can (2.5 oz.) fried onion rings, crushed
- salt, pepper to taste

Flatten each chicken breast, season to taste.  Combine margarine & Worcestershire sauce.  Dredge chicken in margarine mixture, then in crushed onion rings.  Spray baking dish with nonstick spray, and arrange chicken on baking dish.  Top with any remaining margarine mixture.  Bake at 350 degrees, 45 minutes or until tender.

Chicken Garlic Bites

I got this from Recipezaar.

- 2 boneless, skinless chicken breasts, cut into bite sized pieces
- 1/2 c. olive oil
- 4 cloves minced garlic
- 1/4 tsp. pepper
- 1/2 c. breadcrumbs
- 1/4 tsp. cayenne pepper

Place chicken in shallow dish.  In a small bowl, mix olive oil, garlic, and black pepper.  Pour over chicken.  Cover and marinate for 30 minutes.

After 30 minutes, drain.  Preheat oven to 475.  Mix bread crumbs & cayenne pepper.  Coat chicken with the breadcrumbs & cayenne pepper mixture.  Arrange in single layer on baking sheet.  Bake 10 minutes or until brown.

Diet Coke Chicken

This sounds disgusting, but it is delicious... trust me.

4 boneless chicken breasts, halved
1 c. ketchup
nonstick cooking spray
1 can Diet Coke

Spray saute pan with cooking spray.  Place chicken breasts in pan and brown lightly on each side.  Mix ketchup and Diet Coke together.  Pour over chicken. Cook for 45 minutes or until chicken is cooked through.

4 WW points per serving.

Garlic Herb Chicken with Fettucine

I can't remember where I got this-- I think it was out of the newspaper years ago.

8 oz. dry fettucine pasta
1 T oil
1 lb. boneless chicken breast, cut into strips
1 red or yellow pepper, cut into thin strips
1/2 cup garlic herb marinade

Cook pasta.  Meanwhile, heat oil in a large skillet and cook over medium-high heat.  Add chicken, saute for about 5 minutes.  Stir in pepper and cook for an additional 3 minutes, or longer until chicken is cooked.  I usually pour a little of the garlic and herb marinade in for the last few minutes.  When chicken is ready, pour over cooked pasta, and then mix in more of the marinade (basically using it as a sauce.)

Roasted Red Potatoes

From Martha Stewart Living Magazine.

1.5 lbs. baby red potatoes, quartered
2 T. olive oil
2 T. coarsley chopped fresh rosemary
coarse salt & freshly ground pepper

Preheat oven to 425.  Toss potatoes, oil, and rosemary on a rimmed baking sheet.  Spread out potatoes in a single layer.  Season with salt and pepper.  Roast, stirring once halfway through cooking, until potatoes are golden brown and crisp outside and tender inside (about 30 minutes.)

Easiest Vegetable Dip Ever

I've been making this for years.  People love it and it couldn't be easier.

1 container sour cream
1 pkg. Good Seasons Zesty Italian dressing mix

Mix.

That's it!

I usually cut the top off the pepper, pull out the seeds, and use it as a little bowl for the dip.

Mahogany Chicken Wings

My mom got this recipe out of the newspaper when I was a kid, and she has been making them forever.  Now I make them.  They're delicious.

1/2 c. ketchup
1/4 c. honey
5-6 lbs. frozen chicken wings, defrosted
1/2 c. soy sauce
2+ cloves of garlic (jarred, minced garlic works great for this.)

Mix ingredients.  Pour over wings.  Put on rimmed baking sheet in a single layer.  Bake in a 400 degree oven for 1 hour.

Twinkie Strawberry Surprise

From Karen=^..^= on Recipezaar.  This is really good and sooooooo easy!

10 Twinkies (the recipe calls for 10, both times I've made this I've only used 9.)
1 3 1/2 oz. box instant vanilla pudding
1 1/2 c. milk
1 8 oz. container Cool Whip, thawed
2 pkgs. sweetened frozen strawberries, thawed (Make sure you get the sliced, not whole.)

Slice twinkies in half lengthwise.  Lay evenly flat side up in a 9 x 13 inch pan.  Pour strawberries over twinkies.  In a bowl, mix pudding, milk, and whipped topping together until well combined.  Spread over strawberries.  Chill overnight.
